Steak Sliders with Caramelized Onions and Horseradish Cream

Ingredients
1 1/2 lbs tenderloin steak, cut into 1-inch slices
2 Tbs steak seasoning
4 Tbs vegetable oil, divided
1 large sweet yellow onion, thinly sliced
1 cup sour cream
2 Tbs freshly prepared horseradish, to taste
2 Tbs mayonnaise
1/2 tsp black pepper
1/4 tsp salt
1 pkg Brookshire’s Bakery Golden Rolls
1/2 cup whole-grain mustard
sliced Roma tomatoes, for serving
arugula, for serving
Directions
  1. Rub steak with the seasoning. Heat a cast-iron skillet over high heat. When it is almost smoking hot, add 1 tablespoon of oil and the steak. Sear on all sides to form a good crust. Let cook for about 4 minutes per side, depending on thickness, to about medium temperature.
  2. Wipe out the skillet. Add remaining oil and onions. Sauté slowly over low heat for 15 to 20 minutes until onions are golden and caramelized. Lower the heat if onions begin to brown, and also add a tablespoon of water as needed. Remove from skillet, and let cool.
  3. In a small bowl, combine the sour cream, horseradish, mayonnaise, pepper and salt. To prepare the sliders, cut the rolls in half. Spread mustard on the bottom of each roll. Add caramelized onions and tomatoes. Slice the steak thinly. Add three or four slices to each slider. Top with horseradish cream and arugula.
